The chemical “feel” of burn, cool and tingle

Chemesthesis is the chemical sensitivity of skin and mucous membranes (the burn of chilli, the cool of menthol, the sting of carbonation or ammonia), mediated by the trigeminal and other somatosensory nerves rather than by taste or smell receptors. Green’s 2012 paper frames it as a defensive chemical sense working alongside taste and smell within a “chemofensor complex”. The referent is this third chemical sense, essential to flavour because so much of eating’s heat, cool and tingle is chemesthetic, not gustatory or olfactory.[1]

Unit
Chemically evoked somatosensory sensation (irritation, warmth, cooling)
Recovery means
Not applicable
Measured by
Assessed by psychophysical ratings of evoked irritation/cooling and by responses of trigeminal and TRP-channel pathways
