Food microbiology

Bread and milk turn sticky and stringy

In food microbiology, ropiness is a spoilage condition in which a food (classically bread or milk) turns soft, sticky, and stringy, drawing out into slimy threads when pulled apart. It is caused by microbes that secrete exopolysaccharides and degrade the matrix; in bread, Bacillus species produce the rope spoilage that makes the crumb stringy and discolored. Thompson and colleagues' 1998 work on detecting bread rope and Pacher and colleagues' 2022 review Ropiness in bread describe its microbial cause and detection. The referent is a microbial spoilage defect judged by stringiness and microbial load, unrelated to a paint applicator mark.[1][2]

Unit
Degree of stringy, slimy texture and the spoilage organism load
Recovery means
Prevented by hygiene, acidification, and preservatives; spoiled product is discarded, not recovered
Measured by
Assessed by the stringiness of the affected food and by culturing or detecting the causative microbes
